Sous Chef

Job Overview

The Sous Chef will assist with menu creation, daily specials and bulk production. The position will provide supervision over preparation, flavoring and the cooking process. The Sous Chef will also assist with ordering food supplies and equipment, making schedules, setting prices, organizing records and tracking cost percentages.


General Responsibilities


  • This position will assist in leading the culinary kitchen operations working actively with Restaurant Manager.
  • Provide training and development to the culinary staff.
  • Lead kitchen to ensure the proper production of food items and kitchen compliance with company policies and procedures.
  • Coordinate and organize the kitchen. Delegate and follow up on assigned objectives.
  • Assist the Restaurant Manager in the creation of menu items, recipe cards and plate presentations.
  • Assist the Restaurant Manager in managing food costs and labor productivity according to financial guidelines.
  • Audit and ensure productivity by analyzing business levels and adjusting staffing as needed.
  • Assist in the execution of department goals.
  • Supporting staff as needed in daily operations.
  • Understand and ensure adherence to sanitation and safety guidelines according to HACCP, OSHA and health code regulations.
  • Oversee proper requisition, storage, utilization and inventory of food products.
  • Interact with guests and service staff to ensure guest satisfaction.
  • Assist in the development and implementation of policies and controls on issues relating to Kitchen operations to include reduction of waste, spoilage and breakage; food handling and sanitation; recipe, portion control and specifications etc.
  • Control food cost by training kitchen staff on the proper methods of food preparation and handling, by training kitchen, banquet, restaurant and steward associates on how to handle leftover food items, and by making creative use of leftover food.
  • Complete or assist with the administrative duties associated with personnel and payroll matters in a timely manner.
  • Ensure that all restaurant associates consistently adhere to uniform, grooming and appearance standards.
  • Assist with the development and training programs necessary to educate staff on specific job skills and quality of service to guests.
  • Maintain effective communication, be responsive to staff suggestions and concerns and work to resolve problems.
  • Conduct regular inspections of all kitchen/dishwashing areas and coolers to correct deficiencies found during inspection.
  • Other duties may be assigned to assist in the operation.


Job Qualifications

Experience/ Knowledge:

· Must have 2 years leadership experience in a full-service kitchen.

· Must have knowledge of food preparation, sanitation standards and inventory and control systems.

· Must be able to lead, direct, budget and utilize resources effectively.

· Excellent verbal communication skills to interact effectively with guests, owners and co-workers.

License/Qualifications:

· Food Handlers permit required. ServSafe preferred.

· Must be able to work nights, weekends and holidays.

· Must comply with any dress code requirements.

Discretion/Independent Judgment

As a Sous Chef you will be expected to work with Associates to ensure satisfaction. A Sous Chef will have to take initiative and get creative in resolving challenges and involve a higher level Manager only when previous methods have been unsuccessful.

Physical Requirements

· Ability to speak and hear

· Close vision, distance vision, peripheral vision, depth perception, and the ability to adjust focus.

· Constant standing with some walking

· Be able to work in a standing position for long periods of time (up to 8 hours).

· Be able to reach, bend, stoop and frequently lift up to 35 pounds and occasionally lift/move 50 pounds.

· Must have the stamina to work 50 to 60 hours per week.


Working Conditions

· Generally in an indoor setting.

· Will be using a computer occasionally.

· Varying schedule to include evenings, holidays and extended hours as business dictates.

· While performing the duties of this job, the employee is frequently exposed to heat/cold from the mechanical equipment.

· The noise level in the work environment is usually moderate to loud.
